The Real Way To Cook

I’ve been in the restaurant business for over 40 years. There isn’t a job that I haven’t done in a restaurant. I went to culinary school in the early 80’s in New Orleans. Since then, I’ve been a Prep Chef, Pastry Chef and an Executive Chef. Before school I was a waiter in fine dining restaurants in New Orleans. That’s where we did table side service for Caesar Salad, Steak Dianne, Bananas Foster, Cherries Jubilee and Crepe Suzette. I worked at Delmonico Restaurant on St. Charles Avenue for 8 years. I learned a lot from the cooks in the kitchen there. I had the pleasure of knowing Jitterbug, Mr. Leonard, Miss Elma and Miss Flo. These cooks each worked at Delmonico’s for over 40 years each. I will tell more about them later. All in all I have spent lots of hours in the kitchen which add up to lots of experience when it comes to food and technique. I have always wanted to share my experience and the great people I have worked with and admired along the way on my journey of cooking and everything that has to do with food.
